Recipe: Sautéed Swiss Chard

Sautéed Swiss Chard

Ingredients:

  • 2 bunches of Swiss chard
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • ¼ teaspoon salt, or to taste
  • A few grinds of black pepper or a pinch of red pepper flakes
  • Lemon wedges

Directions

  1. Separate stems from leaves. Cut the stems into ¼ inch slices. Pile up the leaves and chop them coarsely.
  2. Put the oil into a large skillet over medium heat. Saute the stems until they begin to soften, about 2 minutes.
  3. Add garlic and pepper, stir until fragrant. Add the leaves and keep stirring for about 2 minutes more until wilted.
  4. Add the juice from a wedge of lemon. Toss all together and serve, with additional lemon on the side.
