Swiss Chard Lentil Soup

Swiss chard pairs well with lentils. This soup is a great way to get the nutrition of both.

 

Ingredients:

  • 2 tablespoons olive oil 
  • 1 large onion, chopped 
  • 2 medium carrots, peeled and chopped 
  • 2 stalks of celery, chopped 
  • 3 garlic cloves, minced
  • ¼ cup parsley, chopped 
  • 2 bay leaves 
  • 1 ½ cups lentils
  • 1 14.5 ounce can whole tomatoes, crushed by hand 
  • Salt and pepper
  • 2 ½ quarts water
  • 1 tablespoon soy sauce
  • 1 bunch Swiss chard, leaves and stems separated. Tough stems discarded, tender stems and leaves chopped.
  • Grated Parmesan for serving 

Directions

  1. In a large pot, heat olive oil over medium heat. Add the onions and saute until lightly browned, about 8-10 minutes.
  2. Add carrots, celery and 2 teaspoons of salt. Saute until softened. 
  3. Add garlic and parsley and saute for 2 minutes.
  4. Add bay leaves, lentils, tomatoes, several grindings of pepper, and the water. Bring to a boil, reduce heat to a simmer, and cook, partially covered, for 40 minutes.
  5. Add soy sauce and chard. Cook for an additional 30 minutes.
  6. Check for seasoning. Serve with grated Parmesan.
